Just two of the various stations at the breakfast buffet at our hotel
We left Saigon (Ho Chi Minh City) and drove to Chau Doc - one of our rest stops with a lovely lotus pond
Maddy, Anne and Sang, our best ever Saigon guide!
We boarded a junk boat to go to Unicorn Island and Phoenix Island. Some of the river activity on the way to Unicorn Island which is located in the middle of the Mekong Delta
Our first stop on Unicorn island - local dried banana snacks, honey, Royal Jelly from bees, and tea
Next stop - local music on the island
We were treated to locally grown fruits and tea
Top row - jackfruit, salt & chiles for the fruit pictured below it, longan, passion fruit & watermelon
Next a skiff ride on one of the canals on the island - Maddy and Sang our guide
Our captain and his junk boat that took us to Unicorn Island
Back on our junk boat heading to Phoenix Island for lunch - this area roped off to expand the size of this island
Fried elephant ear fish for our home made spring rolls
Our waitress making the spring roll, layer of rice paper, cucumber, rice noodles & the fish - yummy
Our captain and his junk boat for our trip to Unicorn Island & Phoenix Island
Back on the road to Chau Duc - another lovely rest spot
